From 120+ year-old vines, 55% of the grapes are destemmed and then they are foot-trodden and fermentation starts with indigenous yeast, before ageing in old oak for 7 years. The result is an intense, concentrated wine with an extremely attractive nose of red fruits, herbs, and spices, followed by high acidity, tight grainy tannins, and a long, gripping finish.
